Chili Recipe

Well, to make chili you don't actually need a recipe, so I'm not going to write a recipe down for you so just, you know, I think you can probably remember it, so this is my mom's recipe for chili and you know it's always the way she used to make it for me when I was a little kid and it was great it was one of my favorite meals when I was, like one year old, and, uh, so what you put in it...um ...She started with ground beef and usually a pound, a pound and a half of ground beef and she would add, um, chili powder to that, I think, and maybe some onion powder and some garlic powder, and I add onion myself. But, um, she never did because Dad really didn't like it very much and he used to complain about what onion would do to his stomach.

You brown the ground beef and, um, you know, add the chili powder, and I don't even think she added black pepper to it. A little bit of season salt, and then the garlic powder a little bit, and onion powder, but really chili powder has that in it, so you can just use the chili powder on top of the ground beef. Also, while you were doing that you would take on the monumental task of opening the cans of things, so yeah, you would need a really big can of kidney beans and you would need a really big can of diced tomatoes. Now, I use diced tomatoes. She used whole tomatoes from a can and just broke them up with a spoon, I think, because they didn't have diced tomatoes then. But anyway, so you'd use diced tomatoes now, and I would drain the kidney beans and if you wanted to you could, um, rinse them, um, I don't, but, keep the fluid from the tomatoes, and add the kidney beans and the tomatoes in the big frying pan. I mean, you might need to switch it to a big pot, but ... And then you add more chili powder and then you just cook it. And, you know, if you wanted to, you could add some hot pepper flakes, or something, but, really, I mean, that's it, that's all it is. It's the ground beef, it's the kidney beans and it's the tomatoes, you know, whole canned or diced, and um... you know we served it with toast, and recently I've gotten wild and crazy and I've put grated cheddar cheese on top. And served it with sour cream on the side, and guacamole, so those are some optional things you could add. And basically, you know, you can cook it half an hour with all the ingredients in or cook it three hours, whatever, I mean, the longer you cook it the more the flavours blend. Or, you could do it in a crock pot, too, and let it sit all day. But, brown the ground beef first if you're going to do it in a crock pot. So far, I've made it for my class, you know, just the way Mom did, and I gave them the instructions and actually one of the students went home, and she made it for her family and she said that her family just loved it. So, you know, obviously it wasn't so difficult that she couldn't just remember what the instructions were.
