Gazpacho Recipe

Have you ever tried Gazpacho? It's a quick and refreshing summer soup. Here are the ingredients:

1 can of tomato soup

1 large sweet red pepper, chopped

1 large English cucumber, chopped

2 stalks of celery, chopped

125ml extra virgin olive oil

juice of 1 lemon

125ml chopped fresh mixed herbs, such as chives, parsley and basil

salt & pepper

Here's how you make it:

In a blender or food processor, mix the tomato juice, red pepper, cucumber, celery, olive oil and lemon juice until liquefied. Then pour it into a bowl. Stir in chopped herbs and season with salt and pepper. Cover and refrigerate for at least 2 hours and then pour into chilled bowls.
